Perfect for Summer!

For whatever reason, I don’t usually make the recipe featured on the front cover of a magazine. I’m not sure why, I guess I just usually find even more interesting recipes buried inside the magazine. That was not the case with Southern Living’s July issue. Right on the front cover was a blurb advertising “Berry Ice Cream Cake.” It immediately got my attention. (The pasta salads pictured on the cover were also delicious – I’ve made one of those recipes and still have to try the others.)

I made the Berry Ice Cream Cake (officially called Red, White, and Blue Ice Cream Cake) for, what else, the Fourth of July. It was so yummy! It was really easy too.

I did make a few modifications. Even though frozen pound cake would be easy, I had the time to make my own. I halved the Joy of Cooking recipe, and even then had plenty of pound cake left over. Hooray for extra cake! I also made the raspberry sauce in advance – it was an easy thing to get out of the way. You can see from the picture that we didn’t skimp on adding the raspberry sauce.

I debated skipping the raspberry preserves step. Adding raspberry preserves to raspberry sorbet seemed to be just too much, but in the end I’m glad I did it. In the carton the raspberry sorbet is more of a pale pink color, and the raspberry preserves really gave it a richer red.

As with any ice cream cake, it needs to be eaten quickly! Luckily it was, and there were hardly any leftovers!


I’m Back with Graham Cracker Ice Cream

Hi! I had to take some time off to tend to things in my personal life, but all’s well and I’m back to baking and blogging! (I never stopped baking – I just ran out of time to talk about it!)

One of my go-to special occasion treats is Jeni’s Splendid Ice Cream, which I purchase either at my local wine store or Whole Foods. Here’s where to buy Jeni’s in your area. I also love making Jeni’s at home, which is why I was super excited when her second cookbook came out. The first recipe I tried from the second book? Graham Cracker Ice Cream.Graham Cracker

It was great! I used crushed Trader Joe’s Honey Graham Crackers. The recipe only used a few, so there were plenty left for serving as a garnish (or munching while the ice cream churned).

Jeni’s suggestion to serve the ice cream with sliced bananas was spot-on. I also added homemade chocolate sauce and a dollop of whipped cream. I think it would also be nice with sliced peaches.

It was definitely a sweet treat, and perfect for those hot summer evenings when turning on the oven is too much.

my Peanut Butter Cup!  Assurance for my pint of Americone Dream! Confidence for my Cookie Dough!  Too often my ice cream or frozen yogurt (B&J’s Half Baked Frozen Yogurt is a revelation!) disappears, spoonful by spoonful, with me being none the wiser.  Then I go to have dessert and there is just a skimpy scoop left in the bottom of the container – if I’m lucky.  Other times the entire pint has disappeared (no names here – you know who you are!)

The pint lock came quickly in the mail.  It consists of two pieces of thick black plastic that fit together around the pint lid.  The lock has a preprogrammed 3-digit alphanumeric code.  It doesn’t seem like you can change your lock’s code, so you’d better write it down and keep it in a secure location, or your pint lock will be useless.  The last thing I want to do is lock myself out of my own ice cream!

You could defeat the lock by slashing the top or bottom of the container with a knife (it is only cardboard, after all) but, as a colleague pointed out, you would have to be pretty desperate.  I think the lock functions as a good deterrent.  It definitely sends the “hands off” message.  Of course, while Ben & Jerry’s sells the lock (and it is surprisingly inexpensive – only slightly more than the pint of ice cream itself) it would work on any brand of ice cream pint.

In short, I recommend the lock, especially if you live with roommates, or are otherwise not into sharing.  It would also make a great gift for Father’s Day or graduation.  As Ben & Jerry’s says on the lock packaging, “There is no ‘u’ in ‘my pint.’”

Oreo-Stuffed Valentine Kisses

I was intrigued to try this cute, no-bake recipe for a Valentine’s Day party.  It turned out to be easy, made a lot of kisses, and was quite popular.

I bought the family-size Oreo box since it was on sale, and was immediately confused about the number of Oreos I needed.  I ended up using 3 sleeves of Oreos minus 7 cookies.

As you mix the cream cheese and crushed Oreos in the mixer, it will become evident whether you need a few more cookie crumbs.  The consistency should be like Play-Doh.

My first few kisses came out a bit funny-shaped, but I eventually got the hang of it.

I definitely recommend putting some kisses in the freezer while you dip the others.  The ones that spend more time in the freezer will also dry faster once they’ve been dipped.  Just don’t let them freeze completely! 

I used a toothpick inserted in the bottom of the kiss to dip them in the chocolate coating.  After they were dry, I wrapped each one, tucking a little strip of paper in the wrapping.  I picked out paper at the craft store that I thought resembled Hershey Kiss paper – a bit thin, but not as thin as tissue paper.  It didn’t quite give me the effect I would have liked.

Don’t forget to dip the remaining Oreos in the remaining chocolate for some yummy chocolate-covered Oreos – keep those a secret for yourself!

Given how easy this recipe was, I may try experimenting with different Oreos, like mint or the golden vanilla ones.  You could also add peppermint extract or a bit of liqueur to the chocolate coating.  Ooh, possibilities!

Scoring a Dessert Touchdown for the Big Game

With Sunday’s big game rapidly approaching (Go Giants!), I am looking for a cute, football themed dessert to make.  Other than cupcakes with football liners and/or footballs on toothpicks stuck in the top, I am lacking ideas.  The ice cream shops always have a football-shaped ice cream cake, but I am not feeling inspired to “tackle” that.

A brief Internet search shows lots of game day recipes for cookies, brownies, and bars.  Seems like “finger food” desserts are popular, which makes sense, especially for large groups.

I can’t think of any desserts that specifically tie into Boston or New York, other than cupcakes.  After all, the cupcake craze had its origins in NYC.

Of course, what do I look forward to on Super Bowl Sunday even more than football?  The Puppy Bowl!  Yet adorable pups running around in a play area that resembles a stadium hasn’t given me any great dessert ideas yet.
